In the Sierra de Francia area, 87 km south from Salamanca, 11 km from La Alberca (historic town) and 8 km to the limit with Extremadura (Las Hurdes).

The mill is located a few steps away from the church.

DESCRIPTION

SOLEAE was born as a business and brand in 2009. María and Jesús Angel, the owners, had the ability and determination to maintain the local olive growing tradition alive, preserving ancient olive groves and incorporating, at the same time, modern processing techniques and know-how in order to obtain a product able to meet the current market demand. So, their extra virgin olive oil has been recognised with several international awards. Namely, it is listed (91 points) at the FLOS OLEI guide, the Italian bible for professionals and passionates of olive oil.

Under the brand ‘SOLEAE’ they produce two single-variety oils, early harvested (in October) from autoctonous olives: ‘manzanilla cacereña’ and ‘ocal’, also known as ‘gordal castellana’) as well as a blend of both varieties. The SANUS brand identifies their range of extra virgin oils having been harvested later: it provides a distinctive aroma and flavour.

  • Guided visit of the traditional olive groves, growing on terraces built by hand for centuries. During the tour visitors get acquainted with the cycle of organic olive oil production and discover the differences between the local olive varieties, whilst enjoying a beautiful mountain scenery.
  • Visit of the small oil mil facilities, where the whole manufacturing process is explained, together with some curiosities about the olive oil. Audiovisual projection (4 minutes), explanation of display panels and tasting. Visitors are introduced to a professional tasting of extra virgin olive oils from different varieties.

DID YOU KNOW?

  • The olive variety ‘mananilla cacereña’ is predominant in the Sierra de Francia area. It is known as the ‘Coco Chanel’ olive. Although it is commonly used as table olive because of its reduced oleic performance it may also produce exceptional quality oils, such as SOLEAE single-variety.
